Unequivocal Neapolitan soul, flaunted with pride and that pinch of sweet life that has always characterized the small square of Sant’Angelo. We were saying, pezzogna. Some call it ‘pagello’, but all agree on the value of its meat. To season the dish, the chef opts for a light fish stock prepared with scraps, and skip the pezzogna bites with garlic and oil, then capers, olives and some tomatoes.
