Raw: Tuna tartara

Always following his own philosophy "The taste of tradition", the dishes of Chef Nicola combine the freshness and the selection, always trying to keep the essence of the products upsetting as little as possible. The important elements naturally are the taste and flavor.

Ingredients

tuna, salt, pepper in grain, extravergin olive oil, lemon, lime

Directions

High-quality tuna fillet of our seas, cut into small cubes and flavored with special salt, pepper corn, lemon, lime and pink grapefruit from our organic farming. All this, according to the procedures previously demolished the kitchen cold with extra virgin olive oil from our olive groves. In the summer evenings, hot and muggy, is the cold dish indeed frozen e served with a glass of Sauten of franciacorta to become the main protagonist.
